Things like floor finishes or countertops can be changed relatively easily, windows not so much, but I see plenty of granite countertops next to the cheapest of cheapest vinyl slider window that can be had at Home Depot for $100. In the construction, I see far too much reliance on thinfs like mortar and grout being 100% waterproof.
